Sauerkraut is finely cut raw cabbage that has been fermented by various lactic acid bacteria. Lactic acid forms when the bacteria ferment the sugars in the cabbage leaves resulting in a long shelf life and a distinctive salty and sour flavor. Fermented foods have a long history in many cultures, with Sauerkraut being one of the most well-known and most health-beneficial foods. Originating nearly 2,000 years ago in ancient China, laborers building the Great Wall of China were kept healthy during the winter months by consuming preserved cabbage. Unlike most store-bought Sauerkraut, which undergoes pasteurization during canning which eliminates all live probiotic content, our Sauerkraut is 100% all-natural and unprocessed resulting in a more nutritious food with better flavor and texture!
